I’ve just made a patch for the 1.1.2’s SpringBoard, which allows you to use customized carrier logo.
UPDATE: this patch forces SpringBoard to display AT&T’s logo regardless of the actual carrier, so you won’t be able to know the real carrier when you’re roaming. If you need a more flexible method, please check The Most Versatile Carrier Logo Patch which allows to add your customized carriers/logos and functions very well whilein roaming.
Here’s the patched file:
1.1.2 SpringBoard with Carrier Logo Patch Only (without SpringBoard scrolling feature)
1.1.2 SpringBoard with Scrolling and Carrier Logo Patches
UPDATE: for the SpringBoard scrolling patch, check this post.
UPDATE: the original SpringBoard: Original 1.1.2 SpringBoard
Here’s the patch detail:

The patch forces the SpringBoard to show AT&T’s logo regardless of the actual carrier. To use it, put the patched SpringBoard into /System/Library/CoreServices/SpringBoard.app/ folder (replace the old one), make sure it has 755 permission, then replace the Default_CARRIER_ATT.png and FSO_CARRIER_ATT.png with your own images, restart SpringBoad to activate it.
